Ready-to-eat neutral cream 75g
BASIC RECIPES
Neutral cream powder 75g
Water (approx. 25°C/lukewarm) 100g
Flavouring of your choice 15-20g
Cream (whipped, unsweetened) 500g
Preparation: Stir ready-to-use neutral cream with liquid
(water, wine, fruit juice) and flavouring until smooth,
leave to swell for 5 minutes,
carefully fold in the cream.
Pour into the desired mould.
Chill in the fridge for approx. Leave to set for 2 hours.
Black Forest cream cake Ø 28 cm
Spread the shortcrust pastry base with raspberry and blackcurrant jam
.
Place a layer of dark sponge base on top, spread the sour cherry filling
and place the second base on top.
Spread the cherry brandy cream (made from neutral cream, 90 parts water
10 parts Black Forest brandy).
Allow the mixture to set in the fridge.
Topping cream: ready-to-use neutral cream dry at
and fold into the cream. Garnish the Black Forest gateau with
dots of cream.
