Professional baking mix for making chocolate sponge bases, roulades and capsules.
Our baking mix can be frozen and defrostedabil.
RECIPES:
Chocolate sponge cake base
Ø26 cm 28cm
You will need:
Dark sponge powder 400gr 460gr
Egg 300gr 345gr
(weigh out approx. 6 pieces with water if necessary)
Water 40ml 45ml
Preparation: Beat all ingredients for approx. 5 min at medium speed
and approx. Whisk quickly for 3 minutes with a fine whisk.
For a Viennese base, mix in 40g of melted butter.
Baking temperature: Preheated oven approx. 190-200°C
Baking time: approx. 35-45 minutes
Chocolate sponge roulade 30 x 40cm
You will need:
Dark sponge powder - 150g
Egg - 150g (approx. 3 pieces)
Water - 10ml
Preparation: Beat all ingredients for approx. 5 minutes at medium speed
and approx. 3 minutes at high speed with a fine whisk.
Baking temperature: preheated oven approx. 220-240°C
Baking time: approx. 7-9min
Do not open the oven during the baking time!
We recommend the following fillings: chocolate cream, strawberry cream
